Asheville, North Carolina - a new gastronomic go-to in state, and Hathcock's Gan Shan appears at its center, its pan-Asian cuisine offering a welcome break in a town full of traditional Southern fare. Though he earned a forestry degree from the University of Georgia, Hathcock has been in the kitchen since 15 (a dishwasher then) before cooking in Atlanta and Charleston restaurants.
