Award-Winning Chef & Owner at The Diplomat

Since Chef Dane Baldwin was 15 years old he worked in the food industry. His first job was at a Sendik's Food Market in Whitefish Bay. At 20 he got in front of the stove, deciding then that this was the profession for him.

Dane's career started at Gil's Cafe, hired as a prep cook and eventually running the kitchen. Before taking the promotion at Gil's, he worked there during the day and at Dancing Ganesha in the evenings – two very different styles of cuisine. He wanted to broaden his knowledge base. At one point Dane was working at three restaurants at once.

That is where things began to click for chef Dane, he often calls it a growth spurt in his career. He moved on to work at Carnevor as Chef de Cuisine to Jarvis Williams, a model example of what a chef should be. Later Dane Baldwin took a position of an executive chef and owner of The Diplomat, and has since earned the 2022 James Beard Best Chef Midwest Award.
