Derek Feldman is the restaurateur behind Uchu Hospitality in New York, which includes Sushi on Jones, Uchu and the newly-opened (and very buzzy) Don Wagyu, which is serving $180 wagyu sandwiches. Uchu, a 10-seat omakase bar that opened in the fall of 2017, received a Michelin star within six months of opening.
