When Jonah Freedman picked up the keys to what had been a 1980's Cuban restaurant and set about turning it into a Jewish-style deli in the heart of LA, everybody told him he was crazy. Like a fox, apparently: that once-dated space is now one of the hottest restaurants in the country (literally; it was named to the Bon Appetit Hot 10 earlier this fall) thanks to Freedman's vision and efforts in acquiring, designing, and running the place. Even the late, great LA Times food critic Jonathan Gold was a fan: "Will the bagel tower be on the menu when you visit? You should only be so lucky."
