For several years, Lee served as the chief creative officer of Modern Meadow, a New York-based biotech startup focused on growing collagen to manufacture animal-free bioleather materials. Her tenure at Modern Meadow was marked by significant advancements in the development of sustainable biofabricated materials.

Lee authored "Fashioning the Future: Tomorrow’s Wardrobe," a seminal text that explores the convergence of fashion, science, and technology. The book remains crucial for designers, scientists, and engineers interested in the future of wearable technology.
